Southern Style Candied Yams

 

Ingredients:

3 medium yams or sweet potatoes

½ cup brown

1 teaspoon cornstarch

1 teaspoon cinnamon

1 teaspoon ground nutmeg

2 tablespoons vanilla extract

¼ teaspoon salt

½ cup butter

½ cup orange juice

1 teaspoon lemon juice

Preparation:

1. Boil yam/sweet potatoes in skin until tender but firm, about 20 - 30 minutes.

2. Run cool water over yams/sweet potatoes and allow to cool enough to handle with hands.

3. Peel/remove skins and cut lengthwise.

4. Place slices in mixing bowl.

5. Make a syrup by simmering brown sugar, vanilla, lemon juice, nutmeg, and orange juice and butter in saucepan.

6. Add cornstarch last until it forms a syrup.

7. Pour syrup over potato slices in mixing bowl.

8. Slowly and carefully turn potatoes to coat, being careful to avoid breaking.

9. Place in oiled baking dish.

10. Bake uncovered in preheated oven at 350F for 30 minutes or until desired tenderness.
